Buttered Spinach

1 large spinach bunch

cooked until tender

2 tablespoons butter -- up to 6

cut into pieces

Salt and freshly milled pepper

Grated nutmeg

 

Serves 2

 

Butter and spinach seem to be made for each other - a generous coating

makes spinach unbelievably silky. But how much butter to use I leave to

you. Piled on an English muffin or a Garlic-Rubbed Crouton, this makes a

simple supper for two.

 

Once the spinach is wilted, add the butter and begin picking up the spinach

with tongs until the butter melts and coats the leaves. Season with salt,

pepper, and a small grating of nutmeg.
