Blanch two bunches trimmed and washed spinach leaves in boiling salted

water. Drain, then toss with 1 tablespoon dark sesame oil and a few drops

rice vinegar to taste. Season with salt and toss again with 1 tablespoon

toasted sesame seeds. Serves 4.
