Remove the stems and wash the leaves, but don't dry them. Put the leaves directly into a large skillet with the water still clinging to the leaves. Add a few pinches of salt and cook over high heat, turning occasionally until the leaves are wilted and bright green, about 3 to 5 minutes. If the spinach is to be used later, rinse under cold water to stop the cooking. Before using, gently squeeze out the excess moisture.
