Cooked Spinach

This is the best way to cook spinach greens that will be seasoned afterward

or used in another dish. Remove the stems and wash the leaves, but don't

dry them. Put the leaves directly into a large skillet with the water

still clinging to the leaves. Add a few pinches of salt and cook over high

heat, turning occasionally until the leaves are wilted and bright green,

about 3 to 5 minutes. If the spinach is to be used later, rinse under cold

water to stop the cooking. Before using, gently squeeze out the excess

moisture. If it's to be used right away, simply drain it, shake off the

excess water, then transfer it to a skillet and season according to the

accompanying recipes.
