Sauteed Parsnips

Amount Measure Ingredient -- Preparation Method

2 pounds peeled parsnips -- in 1/4 " rounds

2 tablespoons canola oil

- or sunflower oil or butter

salt and pepper

chopped parsley

 

Slice 2 pounds peeled parsnips into 1/4-inch rounds. Saute in 2

tablespoons canola oil, sunflower oil or butter in a skillet over

medium heat until tender and beginning to brown, about 6 minutes.

Season with salt and pepper and toss with chopped parsley.

 

Serves 4 to 6.
