Guest guest Posted July 18, 2001 Report Share Posted July 18, 2001 * Exported from MasterCook * Fresh Sweet Corn Salad with Citrus and Garlic Dressing Recipe By :Healthy Tomorrow 1999-09 Serving Size : 12 Preparation Time :0:00 Categories : 2Send Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- DRESSING: 2 Tbsp. fresh lemon or lime juice 1 Tbsp. honey 1 Tbsp. olive or canola oil 1/4 cup water 1/4 tsp. salt substitute 1/2 tsp. onion powder 2 cloves fresh garlic -- minced 1/4 tsp. ground oregano 1/4 tsp. ground basil SALAD: 2 large ears fresh corn 1 green or red bell pepper -- chopped 2 large ripe tomatoes -- chopped 1 cup cubed jicama 1/2 cup diced sweet red onion -- chopped or 5 green onions 1/4 cup fresh cilantro or parsley -- minced Place all dressing ingredients in a cup or jar with a tight lid and shake to blend. (May be made a day ahead.) Chill. Makes 1/2 cup. (May need only 1/3 cup.) Husk and wash corn; cut kernels of corn from cob. Wash remaining vegetables and chop or slice as directed. Mince cilantro or parsley. Mix fresh vegetables, herbs and Lemon & Garlic Dressing in a large bowl. Serve immediately on a bed of lettuce. Serves 12 (serving size approximately 1/2 cup).
