Guest guest Posted July 18, 2001 Report Share Posted July 18, 2001 * Exported from MasterCook * Apple Walnut Muffins with Flaxseed Recipe By :Healthy Tomorrow 2000-04 Serving Size : 24 Preparation Time :0:00 Categories : 2Send Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup flax seed 3/4 cup sifted unbleached flour 1 cup whole wheat flour 1/4 tsp. salt substitute 1/4 cup sugar 2 tsp. baking powder 3 egg whites 2 Tbsp. canola oil 3/4 cup plain soymilk 1/2 cup chopped walnuts 1 large apple -- diced Pre-heat oven to 400F. Grind the flaxseed to a coarse powder in a blender or coffee grinder. In a bowl, sift together the flour, salt, sugar and baking powder. Stir in the flaxseed powder. In a separate bowl, beat together the eggs with the oil and soymilk. Add the liquid ingredients to the dry ingredients and combine with a few swift strokes. Stir the diced apples and the walnuts into the batter. Fill oiled muffin tins two-thirds full and bake for 20-25 minutes. Makes 24 2-inch muffins.
