Guest guest Posted July 18, 2001 Report Share Posted July 18, 2001 Here is another one that I found. * Exported from MasterCook * Apple Cornbread Recipe By : Tara McDermott Serving Size : 1 Preparation Time :0:00 Categories : Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 apples, peeled and chopped thinly 1 1/2 cups unbleached white flour 1 1/2 cups blue cornmeal -- * see note 3 1/2 teaspoons baking soda 1/2 teaspoon salt 1 tablespoon Sucanat 2 1/4 cups vanilla soymilk 1 teaspoon cinnamon 1/4 cup applesauce 2 tablespoons maple syrup *If blue cornbread is unavailable use the regular yellow variety. Preheat oven to 400°F. Oil a 10-inch iron skillet and heat in oven. In a large bowl, combine all other ingredients and then add apple. Do not overmix. Pour into heated iron skillet (or just oil a regular casserole pan), and bake 35-45 minutes on the top shelf. When an inserted knife comes out clean, it's done. This recipe is very moist, but not soggy. If you are not interested in having a fat-free dish, add 3 tablespoons of canola oil or applesauce to improve the flavor a little bit. *POSTEE'S NOTES* This is the best cornbread I have ever eaten. It is moist and sweet rather than spicy.
