Italian Basil-Bulgur Salad

2 cups bulgur

3 cups boiling water

1/4 cup parsley -- chopped

1/4 cup fresh basil -- chopped

1/2 cup scallions -- chopped

1/3 cup red pepper -- diced

Blender Mixture

1/8 cup safflower oil

1/8 cup olive oil

1/8 cup nutritional yeast

1 teaspoon Spike seasoning

2 teaspoons Bragg liquid aminos

1 teaspoon dill

2 teaspoons dried oregano

1/8 cup apple cider vinegar

1 tablespoon garlic powder

1 tablespoon brown rice syrup

1/2 cup water

 

Place the bulgur in a bowl and pour the boiling water over it, cover and allow

to sit for 1/2 to 1 hour to absorb the water.

 

Chop the herbs and pepper and set aside until bulgur is soft.

 

Blend the blender ingredients.

 

When bulgur is softened, add all ingredients to it. Mix together and chill

before serving. (After several hours of absorbing flavors you may want to add a

little lemon juice before serving.)
