Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1/4 cup warm water

1 tablespoon active dry yeast

1 teaspoon sweetener

3 to 3 1/2 cups whole wheat flour

1 cup water

1/2 teaspoon sea salt

2 tablespoons sesame seeds

Place first 3 ingredients into a large bowl and mix. Let rise in a warm (not

hot) place. Yeast will bubble up and activate in about 15 minutes, doubling in

size.

Mix in flour, water, and salt. Dough will get stiff. Knead for 10 minutes.

Oil a clean bowl. Place dough in bowl, cover bowl with a damp towel and set in

a warm place. Let rise for 1 hour or until doubled in size.

Press dough down. Divide into 8 balls and flatten each into 1/2-inch thick

rounds.

Press sesame seeds on top.

Lay a piece of wax paper, loosely, over top of rolls and let rise until doubled.

Bake in a preheated 375F oven for 15 to 20 minutes. Slice when cooled.
