Sauteed Onions

2 tablespoons olive oil

- or a mixture of oil and butter

1 large onion -- in 1/2 " thick slices

salt and freshly milled black pepper

 

Serves 2 to 3

 

Cooking onions over brisk heat produces one of the best anticipatory

smells I know. Sauteed onions add much to simple foods, such as a

grilled cheese sandwich or a plate of macaroni and cheese.

 

Heat the oil in a wide skillet. Add the onion and saute, flipping

often but letting them rest in the pan long enough to brown, about 5

minutes in all. Season with salt and pepper and serve right away
