Serve this sauce with baked or grilled onions or over an onion frittata. Melt 3 tablespoons butter in a small skillet over high heat. When it foams, add 2 tablespoons sherry vinegar and boil it rapidly, shaking the pan back and forth, until it's emulsified, then pour it directly over the onions.
