I prefer fresh red or white onions from the farmers' market, but storage onions work well, too. Peel large onions, slice them into 1/2-inch-thick rounds, and secure each slice with one or two toothpicks to keep the rings from separating.Brush both sides with olive oil and season with salt and pepper. Grill for 8 to 10 minutes, until they're nicely marked, then turn them carefully and cook the second side until well marked and softened. Arrange the onions on a platter.Serve with butter or olive oil and lots of freshly ground pepper, with a splash of your favorite vinegar, or sprinkle with ground chipotle chile.
