Baked Whole Onions in Their Jackets

Amount Measure Ingredient -- Preparation Method

firm onions

salt and pepper

butter or olive oil

freshly minced parsley

or thyme or tarragon

 

Allow one firm onion per person. Put them, unpeeled, on a baking

dish, add 1/2 inch water, and cover with aluminum foil. Bake at 375F

for 1 hour. Uncover and continue baking until tender when pierced

with a knife, 15 to 30 minutes more, depending on the size. Cut them

in half and serve them in their jackets or pull back the skins and

slice off the root end. Season with salt, lots of freshly ground

pepper, butter or olive oil, and finely minced parsley, thyme, or

tarragon.
