Steamed Leeks

Allow one or two leeks per person. Halve them lengthwise, leaving the

root end intact, and wash well. Steam them, cut sides down,until

tender when pierced with the tip of a knife, 8 to 20 minutes,

depending on their size. Remove to a platter and dress with extra

virgin olive oil or one of the recommended sauces:

 

Romesco Sauce

Garlic Mayonnaise

Tarragon Mayonnaise with Capers

Green Herb Sauces

Mustard Vinaigrette

Herb-Butter and Olive Oil Sauce
