Guest guest Posted July 18, 2001 Report Share Posted July 18, 2001 * Exported from MasterCook * Steam-Roasted Potatoes Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 415 Serving Size : 4 Preparation Time :0:00 Categories : Potatoes Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds small red potatoes -- scrubbed well 3 tablespoons melted butter or olive oil Salt and freshly milled pepper OR one of the herb salts (see separate recipes) Chopped parsley or fines herbes SERVES 4 to 6 These roasted potatoes are creamy inside, crisp on the outside. For best results, use the small golf-ball-sized red potatoes sold as " new " potatoes. Remove a band of skin around the middle of each potato and steam until tender but shy of being done when pierced with a knife, 15 to 20 minutes. Preheat the oven to 425F. Put the potatoes in a baking dish and roll them around with enough butter or olive oil to coat lightly. Bake until the skin is golden brown, about 40 minutes, giving the pan a shake a couple of times so the potatoes will brown evenly.
