Heat the butter in a wide, heavy skillet - cast iron is fine - over high heat. Add the potatoes and fry without disturbing them until they begin to color on the bottom, about 5 minutes. Turn them over and fry on the second side until the potatoes are golden and tender, about 15 minutes in all.
