Preheat the oven to 450F and lightly oil a cookie sheet. Peel two russet potatoes, then cut them into large batons or French fries. Toss with enough oil to coat them lightly, then set them on the pan in a single layer. Bake for 10 minutes and turn them over. Bake for 20 minutes more, turning them several times so that they color on all sides. When golden and tender, sprinkle with salt and serve piping hot. Accompany with spicy Romesco Sauce, with mayonnaise flavored with Harissa, or dust them with cayenne (see separate recipes).
