Guest guest Posted July 17, 2001 Report Share Posted July 17, 2001 * Exported from MasterCook * Peanut Butter Muffins Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups pastry flour 1 tablespoon baking powder 1 1/2 cups tofu milk* 1/3 cup oil 1/4 cup sweetener (Sucanat) 1/4 cup peanut butter Sift flour and baking powder into bowl. Bend tofu milk, oil, and sweetener together. Add peanut butter. Stir with a fork. In a bowl, mix dry ingredients into the blended mixture. Mix well but don't beat. Oil a muffin tin. Fill each cup 2/3 full. Bake in a 350F preheated oven for 25 minutes. *Tofu milk - made by blending 8 oz tofu with 2 cups of water which makes 2 1/2 cups. Adjust accordingly for each recipe.
