I like snow peas plump and whole, but you can slice them diagonally to give the dish a more dynamic play of shapes. Heat a wok or large skillet, then dribble in the oil. When the oil is hot, add the garlic and stir-fry for 30 seconds. Add the peas and stir-fry until they turn bright green.
