Stir-Fried Peas with Sichuan Pepper Salt

1 1/2 tablespoons roasted peanut oil

1 clove garbanzo beans -- chopped

1 pound snow or sugar snap peas -- strung

1/2 teaspoon Sichuan Pepper Salt (see recipe) -- to 1 tsp

- to taste

 

Serves 4 to 6

 

The spicy, aromatic salt is delicious with peas, but it you haven't

any, use plain sea salt. I like snow peas plump and whole, but you

can slice them diagonally to give the dish a more dynamic play of

shapes.

 

Heat a wok or large skillet, then dribble in the oil. When the oil is

hot, add the garlic and stir-fry for 30 seconds. Add the peas and

stir-fry until they turn bright green. Turn off the heat, sprinkle

with the salt, toss again, and serve.
