Preheat the oven to 400F. Toss the Jerusalem artichokes with the oil and 1/2 teaspoon salt. Bake them in a shallow gratin dish with the herb for 20 to 30 minutes. Pierce them with the tip of a knife -- they should be mostly tender but offer some resistance.
