Roasted Jerusalem Artichokes

1 pound Jerusalem artichokes -- slice in 1/2 " rounds

- or left whole

1 tablespoon sunflower seed oil -- to 2

salt and freshly milled pepper

rosemary or thyme sprigs

 

Serves 4 to 6.

 

Preheat the oven to 400F. Toss the Jerusalem artichokes with the oil

and 1/2 teaspoon salt. Bake them in a shallow gratin dish with the

herb for 20 to 30 minutes. Pierce them with the tip of a knife --

they should be mostly tender but offer some resistance. Season with

pepper.
