Fried Okra

Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, p 392

Serving Size : 4 Preparation Time :0:00

Categories : Vegetables

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 pound okra -- sliced 1/4 " thick

peanut oil

This remains one of the most popular ways to eat okra, probably

because the crisp coating mitigates the slippery texture. Serve with

spicy Green Chile Mayonnaise, or as a garnish for a summer stew of

corn and beans. Slice 1 pound small okra into rounds about 1/4 inch

thick and toss with 1 cup fine cornmeal or crushed cracker crumbs --

saltines are fine -- mixed with 1 teaspoon salt.Heat 1/2 inch peanut

oil in a heavy skillet until it's just short of smoking. Toss the

okra in a large sieve to shake off the excess cornmeal, then fry in

small batches until golden. Transfer to paper towels to drain

briefly, but serve hot. (You can also fry whole pods.)
