Serve with spicy Green Chile Mayonnaise, or as a garnish for a summer stew of corn and beans. Slice 1 pound small okra into rounds about 1/4 inch thick and toss with 1 cup fine cornmeal or crushed cracker crumbs -- saltines are fine -- mixed with 1 teaspoon salt.Heat 1/2 inch peanut oil in a heavy skillet until it's just short of smoking. Toss the okra in a large sieve to shake off the excess cornmeal, then fry in small batches until golden. Transfer to paper towels to drain briefly, but serve hot. (You can also fry whole pods.)
