Sauteed Mushrooms with Garlic and Parsley

1 pound mushrooms -- cleaned

- one or several varieties

3 tablespoons butter or olive oil or a mixture -- to 5

salt and freshly milled pepper

1/2 lemon

2 tablespoons chopped parsley

1 large garlic clove -- minced

 

Very simple and fast, this is one of the most basic -- and best --

ways to cook mushrooms. Mushrooms are delicious cooked in either

butter or olive oil -- or a mixture of both.

 

Cut the mushrooms into halves, quarters, or slices about 1/4 inch

thick. Melt the butter in a wide skillet over high heat. Add the

mushrooms all at once and immediately move them around the pan so

they all pick up a little of the fat. Keep sauteing even though the

pan appears to be dry. Once the mushrooms yield their juices and then

reabsorb them, they'll begin to color nicely. When golden, season

well with salt and pepper. Add a squeeze of lemon,then toss with the

parsley and garlic and serve.
