The unique flavor of dried wild mushrooms enhances all mushroom

sautes and ragouts. Use 1/2 ounce or even more if you have them.

Cover them with warm water and set them aside to soak anywhere from

15 minutes to several hours. Drain but reserve the flavorful water.

Chop the mushrooms and saute them with fresh ones; use the liquid,

carefully decanted, in place of stock or water in your dish.
