You can use any type of potato in this dish. Preheat the oven to 425F. Toss the potatoes with enough oil to coat them lightly, 1 teaspoon salt, and a little pepper. Bake in a shallow pan in a single layer until tender when pierced with a knife, 25 to 40 minutes, depending on the size.
