Roasted Potatoes

1 1/2 pounds potatoes -- peeled

and cut into chunks more or less the same

Olive oil

Salt and freshly milled pepper

 

SERVES 4 TO 6

 

Onions, parsnips, celery root, turnips, and artichokes are also good

roasted and can be cooked right alongside the potatoes. You can use any

type of potato in this dish.

 

Preheat the oven to 425F. Toss the potatoes with enough oil to coat them

lightly, 1 teaspoon salt, and a little pepper. Bake in a shallow pan in a

single layer until tender when pierced with a knife, 25 to 40 minutes,

depending on the size. Stir them a few times so that they brown evenly.
