Here are some very basic potato recipes/directions:

Steamed Potatoes

A perfect treatment for tender new potatoes. Bring an inch of water to a

boil in a saucepan. Scrub the potatoes and set them in a steaming basket

over the water. Cover and steam until tender when pierced with a knife, 25

minutes or longer, depending on their size. Remove and toss with butter or

extra virgin olive oil, salt, and freshly milled pepper.

Boiled Potatoes

Put scrubbed or peeled potatoes in a saucepan, cover with cold water, and

bring to a boil. Add a little salt, then lower the heat and simmer until

the potatoes are tender when pierced with a skewer or knife, 15 to 30

minutes, depending on their size.

Broiled Potatoes

Cut steamed or boiled potatoes lengthwise in half and score the tops with

the tip of a knife. Brush them with oil or butter and broil, cut side

facing the heat, until bubbling and browned. Remove and garnish with

garden herbs, Golden Mustard Barbecue Sauce (see separate recipe), or

freshly milled pepper and sea salt.
