Tofu Yogurt

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds soft tofu

2 tablespoons sweetener (maple syrup, Sucanat)

1 banana -- peeled, frozen, sliced

1 banana, ripe (spotted) -- sliced

1/4 cup fruit juice

1 teaspoon vanilla

1 cup frozen berries

dash lemon juice

 

Yields 2 to 4 servings. In a blender or food processor, blend all ingredients

together until creamy.

 

Chill in the freezer until just before froze, then serve.

 

*For a better consistency use a food processor and omit some liquid if

necessary.
