Grilled Leeks with Parmesan and Olive Croutons

8 Grilled Leeks -- see recipe

thin shavings of Parmesan or Gruyere

8 croutons spread with Olive Paste -- see recipe

2 hard-boiled eggs -- quartered

chopped parsley or chervil

salt and freshly ground pepper

 

A perfect first course to an elegant light lunch.

 

Arrange two grilled leeks on individual plates, lay the cheese

shavings over them, and place two small olive croutons and two egg

quarters on each plate. Sprinkle parsley over all and season with

salt and pepper.
