Grilled Artichokes

artichokes -- (regular or baby)

olive oil

chopped garlic -- optional

chopped parsley -- optional

salt and freshly milled pepper

lemon juice

 

Cut the regular artichokes lengthwise in half, set them cut side down on the

counter, and press down on them to force the leaves open. (You can leave the

babies whole or cut them as well.) Rub them generously with olive oil, pushing

it into the leaves. If you like, you can work in chopped garlic and parsley as

well. Season well with salt and pepper. Set them over the coals and grill on

both sides until the base is tender when pierced with a knife, 30 to 45 minutes.

Arrange the artichokes on a platter, squeeze lemon juice over them, and serve

with lots of napkins. Since they will be at least partially charred, there's no

way to eat these neatly.
