Guest guest Posted July 15, 2001 Report Share Posted July 15, 2001 * Exported from MasterCook * Artichokes Stuffed with Bread Crumbs, Capers, and Herbs Recipe By :Vegetarian Cooking for Everyone, Deborah Madison Serving Size : 4 Preparation Time :0:00 Categories : VCE -- Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 artichokes 1 3/4 cups fresh bread crumbs 1/4 cup extra virgin olive oil 2 cloves garlic -- minced or pounded 3 tablespoons chopped parsley 4 teaspoons chopped thyme or marjoram 1/2 cup freshly grated Parmesan 2 tablespoons chopped green olives 2 tablespoons capers -- rinsed 1 teaspoon red wine vinegar -- (to 2 tsp) 1 Roma tomato -- diced salt and freshly milled pepper 1 large onion -- thinly sliced 1/4 cup dry white wine -- or water Prepare artichoke containers as described on page 330. Toss the bread crumbs with half the oil and fry in a skillet over medium heat until crisp and golden. Combine with the garlic, parsley, 1 tablespoon of the thyme, cheese, olives, and capers. Moisten with the vinegar, stir in the tomato, and season with salt and pepper. Pack the mixture firmly into the artichokes. Preheat the oven to 375ºF. In a skillet, saute the onion in the remaining oil and the thyme over medium heat until softened, about 8 to 10 minutes. Season with salt and pepper, then transfer to a baking dish large enough to hold the artichokes comfortably. Place the artichokes on the onions and pour the wine into the dish. Cover with parchment or wax paper, then with aluminum foil. Bake until heated through, about 30 minutes, then remove the cover and brown under the broiler.
