easy side dish. Small or large couscous...

fresh artichoke bottoms? I would use frozen artichokes for convenience

Mediterranean Couscous

Amount Measure Ingredient -- Preparation Method

3 tbsp. olive oil -- divided use

2 fresh artichoke bottoms -- cut into 1/2-inch dice

1 clove garlic -- minced

1 small red bell pepper -- cored, 1/4-inch dice

1 zucchini -- 1/4-inch dice

1 1/2 teaspoons honey

1 cup water

1 cup couscous

 

 

1. In a skillet, heat 2 tbsp. olive oil. Add artichokes and cook, tossing, for

2-3 minutes. Add garlic and red pepper and continue to cook for 2 minutes,

followed by zucchini, and toss until tender. Stir in honey, season to taste with

salt and pepper and set aside.

 

2. In a small saucepan, bring 1cup water and 1 tbsp. olive oil to a boil. Add

couscous and salt to taste. Cover, remove from heat, and set side for about 5

minutes or until water is absorbed and couscous is tender. Fluff couscous with

fork, add sautéed vegetables and season to taste with salt and pepper.
