Guest guest Posted July 13, 2001 Report Share Posted July 13, 2001 * Exported from MasterCook * Lentil Spinach Salad Recipe By :New Vegetarian Basics by Nettie Cronish Serving Size : 6 Preparation Time :0:00 Categories : Salads and Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup green lentils -- rinsed 5 cloves garlic -- divided use 1/2 teaspoon salt 8 ounces mixed sweet and white potatoes -- peeled 1/3 cup olive oil -- divided use 4 cups chopped spinach leaves or swiss chard leaves 1/3 cup red wine vinegar 1/2 cup thinly sliced red onion 1 carrot -- grated 1/4 cup chopped fresh basil 1/2 teaspoon dried thyme 1/2 teaspoon dried marjoram 1/4 teaspoon cayenne pepper 1/4 teaspoon salt 1/4 teaspoon black pepper 1. In saucepan pour enough boiling water over lentils to cover by 3 inches; soak for 20 minutes. Drain and return to pot. 2. Cut 2 of the garlic cloves in half; add to pot along with salt. Add enough water to cover and bring to boil; reduce heat and simmer for 12 minutes or until tender. Drain, discarding garlic. Place in large bowl. 3. Meanwhile, boil or steam potatoes until tender, about 10 minutes. Drain and let cool. Cut into 1/2-inch cubes. Add to lentils. 4. Mince remaining garlic. In large skillet, heat 2 tbs of the oil over high heat; cook garlic until fragrant. Stir in spinach and toss until just wilted. Add 2 tbs of the vinegar; toss again. Add to lentil mixture along with onion, carrot and basil. 5. Whisk together remaining oil and vinegar; add thyme, marjoram, cayenne, salt and pepper; pour over salad and toss.
