Orzo and Roasted Red Peppers

16 ounces orzo (rice-shaped pasta)

1/2 cup pine nuts

2 garlic cloves -- chopped

1 cup roasted red bell peppers -- drained, sliced into strips

1/3 cup extra virgin olive oil

1/4 cup grated Romano cheese

2 cups broccoli florets

 

Cook orzo according to package directions.

 

Meanwhile, toast pignoli nuts at 350 degrees in the oven until golden, 6 to 8

minutes. Transfer to large serving bowl. Stir in garlic, peppers, oil, and

cheese.

 

Place broccoli in colander; when orzo finishes cooking, pour boiling water and

pasta over the broccoli. (The hot water will blanch the broccoli.)

 

Add pasta and broccoli to pepper and oil mixture. Toss to combine. Serve

immediately.

 

Servings: 5 to 6
