It's on my 'to-try' list. ~ Brenda Adams * Exported from MasterCook * Warm Dipping Sauce for Bread** Recipe By :Oregonian FoodDay, December 12, 2000 Serving Size : 10 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup extra-virgin olive oil 1 cup finely chopped red onion 1/3 cup coarsely chopped black olives 2 tablespoons balsamic vinegar 4 ounces crumbled blue cheese 1 good-quality baguette -- cut into 1/4-inch slices In skillet, heat the olive oil over medium heat. Add onions and saute gently until onions soften, about 5 to 7 minutes. Stir in olives and vinegar; remove from heat and let cool slightly. Note: The recipe may be prepared to this point several days ahead and refrigerated before serving; warm before proceeding with recipe. When ready to serve, crumble the blue cheese into the warm sauce. Stir gently, making sure that most of the cheese remains in identifiable chunks (that will soften as the sauce sits). Pour the sauce into a shallow container and serve immediately with baguette slices for dipping. Serving option: Provide smaller plates next to the sauce so diners can spoon a portion of the sauce onto an individual plate for dipping. Makes about 10 servings (3 tablespoons each) Notes: This is easy! easy! easy! for holiday entertaining.
