Medium asparagus can be cooked in the same easy fashion. Bring a large stockpot filled with salted water to a boil over high heat. Add the beans and cook until crisp-tender, about 5 minutes. Drain well. In a large nonstick skillet, heat the oil over medium heat. Add the garlic and cook, stirring constantly, 1 minute. Add the drained green beans and season with salt and pepper. Cook, tossing and stirring constantly, until hot, 2 to 3 minutes. serve at once. Advance Preparation: After blanching in the boiling water and draining, the beans may be refreshed under cold running water, drained again, and refrigerated, covered, for up to twenty-four hours. Bring to room temperature before completing the recipe.
