We use avocado the way we might tomatoes: as a garnish. sliced or diced.

In soups like tomato tortilla. In sandwiches: try radish slices, alfalfa sprouts

tomatoes and sliced avocado with a cilantro lime dressing. Great with scramblers

or omelets. Chunky guacamole that more tomatoes, corn, black beans etc. with

avocado chunks.

 

it's also good treated as a vegetable!

Sauteed Zucchini with Corn and Avocado

Amount Measure Ingredient -- Preparation Method

3 medium zucchini -- trimmed

2 teaspoons avocado or vegetable oil

3/4 cup diced red bell pepper

6 trimmed scallions with 1-inch green -- thinly sliced

2 cloves garlic -- minced

2 cups corn kernels -- preferably fresh

1 peeled and pitted avocado -- coarsely chopped

lime juice (optional) -- see tip

1 teaspoon warmed cumin seed -- ground

1 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

 

1. Grate (medium to large) zucchini. Set aside.

 

2. Heat oil in a large skillet or wok and add the bell pepper, scallions and

garlic. Cook 2 minutes over medium heat. Add zucchini and corn. Cook 5 minutes.

Add remaining ingredients and cook just until avocado softens, but vegetables

are still firm.

 

TIP - Peel and chop avocado and sprinkle with fresh lime or citrus juice.
