Guest guest Posted July 10, 2001 Report Share Posted July 10, 2001 * Exported from MasterCook * Vegetable Burger Roll-Ups Recipe By :Vegetarian Classics, Jeanne Lemlin Serving Size : 2 Preparation Time :0:00 Categories : Vegetarian Classics Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 8-inch flour tortillas 1 tablespoon canola oil 2 vegetable-style burgers (your favorite kind; mine is frozen Gardenburgers) 3 tablespoons mayonnaise 1 tomato -- thinly sliced 2 thin slices red onion -- separated into rings Preheat the oven to 350ºF. Wrap the tortillas in foil. Heat in the oven until hot throughout, about 5 minutes. Warm the oil in a medium skillet. Cook the burger according to package directions. Place the tortillas on large plates. Spread each with half the mayonnaise. Crumble up the burger and sprinkle it on the bottom half of the tortilla. Top with the tomato and onion. Roll up the sandwich tightly, then cut in half on the diagonal. Serve immediately. TIPS: As an option, the tortillas can be folded gently in half and heated in a toaster for 30 seconds or so. Other filling additions or substitutions are shredded lettuce, sauteed mushrooms, and diced avocado. Russian dressing is a delicious alternative to plain mayonnaise. To make it, mix mayonnaise, ketchup, and relish together until blended.
