This was last nights dinner. Burritos with a mediterranean-style salsa. It

was very good.

Mediterranean Burritos

Amount Measure Ingredient -- Preparation Method

1 cup canned black beans -- drained & rinsed

1 tsp ground cumin

2 cloves garlic -- minced

1 tbsp fresh cilantro -- chopped

1 tbsp pure ground chile

pinch salt

4 flour tortillas

1/4 cup mozzarella cheese -- shredded

1 cup salsa

1 cup Feta cheese -- crumbled

1 cup tomatoes -- chopped

1/4 cup black olives -- sliced

1/4 cup red onion -- chopped

 

For Burritos: Mix together black beans, cumin, garlic, cilantro, chile

powder and salt.

 

Soften tortillas, according to package directions. Place 1 on work surface.

Cover with cheese. Top with black bean mixture. Roll up. Place in a greased

baking pan.

 

Continue until all burritos are rolled and in pan. Bake for 10 minutes at

350°F.

 

For Mediteranean Salsa:

 

While burritos in the oven, mix together the feta cheese, salsa, tomatoes,

olives, and red onions.

 

To serve: place one burrito on a plate. Cover with mediteranean-style salsa.

Serve with rice or bulghur wheat.
