Guest guest Posted July 8, 2001 Report Share Posted July 8, 2001 * Exported from MasterCook Mac * Baked Onions, Italian Style Recipe By : The Mediterranean Vegan Kitchen, Donna Klein p 145 Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 small yellow onions -- 4 to 5 ounces each peeled 6 teaspoons extra virgin olive oil salt - preferably coarse -- to taste freshly ground black pepper -- to taste 4 teaspoons unseasoned dry bread crumbs Don't be inclined to overlook this simple recipe.Seasoned with salt and pepper, sprinkled with plain bread crumbs drizzled with olive oil, then stashed in the oven for about seventy-five minutes these caramelized onions literally melt in your mouth. Preheat the oven to 350F. Bring a large saucepan or medium stockpot of water to a boil over high heat. Add the onions, reduce the heat slightly, and simmer briskly for 5 minutes. Drain and let cool slightly. When the onions are cool enough to handle,, cut them in half crosswise. Lightly oil a shallow baking dish or pie plate just large enough to hold the halved onions in a single layer. Rub the rounded outsides of the onion halves evenly with 2 teaspoons of the oil. Arrange in the prepared dish. Season each onion half with salt and pepper.Sprinkle each half with 1/2 teaspoon of the bread crumbs. Drizzle 1/2 teaspoon of the remaining oil on top of each half.Bake for 1 hour and 15 minutes, or until the tops are browned and caramelized.
