Tamarind-Plum Dipping Sauce

Amount Measure Ingredient -- Preparation Method

1/4 cup apple juice

1 cup canned plums -- drained and pitted

1 tablespoon fresh lemon juice

2 tablespoons tamarind paste

1/8 teaspoon cayenne pepper

1/8 teaspoon ground coriander

1/8 teaspoon ground cinnamon

 

Makes about 1 cup; serves 4 to 6

 

This transcendent sauce is especially good with samosas, pakoras, egg

rolls, or steamed dumplings, but it can add an exotic nuance to many other

dishes as well. Use your imagination and pair it with something

unexpected, like steamed vegetables or stir-fried tofu. Tamarind paste is

available in Indian markets or specialty food shops.

 

In a blender or food processor, combine all the ingredients and until

smooth. Transfer to a small bowl, cover, and refrigerate for at least 2

hours or up to 1 week.
