Dals can be made with a variety of different legumes, such as lentils or peas, depending on preference. Garam masala is an Indian spice mixture used to make curries. If unavailable, use regular curry powder or paste. Put the lentils in a saucepan with 4 cups of water and bring to a boil. Reduce heat to medium-low and simmer, covered for 30 minutes, or until soft. Drain and set aside. Heat the oil in a skillet over medium heat. Add the garam masala and onion and sauté until the onion begins to soften, about 5 minutes. Stir in the garlic, ginger, tomatoes, salt, cayenne, coriander, and turmeric and cook until the vegetables have softened, about 10 minutes. Combine the onion mixture with the cooked lentils, transfer to a serving dish, and sprinkle with chopped cilantro. - - - - - - - - - - - - - - - - - -
