Oh, You Beautiful Dal

1 1/4 cups dried lentils

1 tablespoon canola oil

1 teaspoon or more garam masala

1 onion -- finely chopped

1 garlic clove -- finely minced

1 tablespoon minced fresh ginger

1 cup chopped tomatoes

Salt -- to taste

1/4 teaspoon cayenne pepper

1/4 teaspoon ground coriander

1/8 teaspoon ground turmeric

1 tablespoon chopped fresh cilantro

 

Serves 4

 

This classic Indian dish can be a meal in itself or a companion to a

curried dish. Dals can be made with a variety of different legumes, such

as lentils or peas, depending on preference. Garam masala is an Indian

spice mixture used to make curries. If unavailable, use regular curry

powder or paste.

 

Put the lentils in a saucepan with 4 cups of water and bring to a

boil. Reduce heat to medium-low and simmer, covered for 30 minutes, or

until soft. Drain and set aside.

 

Heat the oil in a skillet over medium heat. Add the garam masala and onion

and sauté until the onion begins to soften, about 5 minutes. Stir in the

garlic, ginger, tomatoes, salt, cayenne, coriander, and turmeric and cook

until the vegetables have softened, about 10 minutes. Combine the onion

mixture with the cooked lentils, transfer to a serving dish, and sprinkle

with chopped cilantro.
