Guest guest Posted July 6, 2001 Report Share Posted July 6, 2001 * Exported from MasterCook * Linguine With Spicy Artichoke Sauce (Quick) Recipe By :Main Course Vegetarian Pleasures Serving Size : 4 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 6 garlic cloves -- minced 1/4 teaspoon crushed red pepper flakes 28 ounces canned plum tomatoes -- finely chopped, well drained 1/2 teaspoon dried basil 1/2 teaspoon dried oregano 1/2 teaspoon salt 1 pound linguine 6 ounces marinated artichoke hearts 1/4 cup minced fresh parsley grated parmesan cheese 1. Heat the oil in a large skillet over medium heat. Add the garlic and pepper flakes and cook 2 minutes, tossing often. Stir in the tomatoes, basil, oregano, and salt and bring to a boil. Reduce to a simmer and cook, stirring often, for 15 minutes. 2. Meanwhile, bring a large stockpot of water to a boil. Drop in the linguine and cook until al dente. Taste a piece to avoid overcooking. 3. Add the artichokes and their marinade to the sauce. Stir in the parsley. Simmer about 5 minutes. 4. Drain the linguine and place it in a large bowl or return it to the pot. Toss with the sauce. Serve sprinkled with Parmesan cheese.
