napa and celery and yogurt salad

This book is not vegetarian. It allows a small amount of " animal food " - mostly

fish, seafood, and chicken. There are many recipes in the book that are

vegetarian or vegan.

 

So far I've not tried the recipes -- the pantry is a bit exotic. umeboshi

vinegar, almond butter, brown rice vinegar.... thing that are mail order for me.

Also, the amounts of oil and fat are higher than we allow in our diets ... so

I'd have to tweak the recipes.

 

I think I've asked before but i don't recall the answer. Is flax seed oil stable

at room temperature when the house is as hot as 80? what is it's shelf life?

is it photosensitive?

Chinese Napa Cabbage and Celery Salad

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 small head of cabbage -- shredded

Chinese napa or red, green or savoy

3 stalks celery -- chopped

1 carrot -- grated

2 ounces (4-inch) daikon radish -- approximate

or 6 white radishes -- grated and chopped

1 recipe creamy yogurt dressing -- see recipe

sea salt and pepper -- to taste

 

1. In medium bowl, put cabbage, celery, carrot and radish. Stir in creamy yogurt

dressing.

 

2. If time permits, let salad marinate in the refrigerator for 30 minutes or

overnight. Before serving, taste and add a pinch or two of salt, if needed.

Grind fresh pepper on top.

weaken as we age. We've combine the napa cabbage with celery, a source of

phytohormones.

Creamy Yogurt Dressing

Amount Measure Ingredient -- Preparation Method

1/4 cup plain bacteria-active yogurt

2 tablespoons brown rice vinegar

or cider vinegar

2 tablespoons salted plum vinegar (umeboshi)

or 2-tbs lemon juice and 1/2-tsp salt

1 tablespoon flax seed oil

1/2 teaspoon oregano

pinch sea salt

black pepper

 

In a small bowl mix together yogurt, vinegars, flax seed oil, oregano, salt and

pepper. Pour over salad and toss.

 

VARIATIONS: Add minced garlic, chopped parsley or dill or scallions
