Amount Measure Ingredient -- Preparation Method

1/2 cup dried lentils

1 cup Brown Rice with Love

(see separate recipe)

1/2 cup ground almonds

1/4 cup grated carrot

steamed for 2 minutes

1/4 cup grated onion

1/2 teaspoon salt

1/2 teaspoon chili powder

1/8 teaspoon cayenne pepper

3/4 cup dried bread crumbs

2 tablespoons canola oil

plus more as needed

 

Serves 6

 

From the cooking of the lentils and brown rice to the grinding of almonds

and grating of carrots and onions, the resulting burgers are true labors of

love. Serve with Magic Mushroom Sauce (see separate recipe) or on a

toasted whole-grain roll with all the trimmings.

 

Place the lentils in a saucepan with 3 cups of cold water, cover, and bring

to a boil. Reduce heat to low and simmer for 25 to 30 minutes or until tender.

 

In a large bowl, combine the lentils and all the remaining ingredients,

except the bread crumbs and oil, until well mixed. Shape the mixture into

6 patties. Coat with the bread crumbs. Heat the oil in a large skillet

over medium-high heat. Cook the patties for about 4 minutes on each side,

or until golden brown. Add more oil to the skillet as needed.
