Five-Flavor Tofu With Sake-Orange Sauce

1 tablespoon five-spice powder

1/8 teaspoon cayenne pepper

1 pound firm tofu -- drained

and cut into 1-inch slices

1 tablespoon canola oil

2 cups Vital Vegetable Stock

(see separate recipe)

2 tablespoons grated orange zest

2 tablespoons sake or dry white wine

Salt and freshly ground pepper -- to taste

Brown Rice with Love

(see separate recipe)

1 tablespoon chopped fresh cilantro

 

Serves 4 to 6

 

A symphony of flavors infuse the basic goodness of tofu, rich in calcium

and protein.

 

In a shallow bowl, combine the five-spice powder and cayenne. Sprinkle the

spice mixture evenly on the tofu pieces. Heat the oil in a large skillet

over medium heat. Add the tofu and cook until browned on each side, about

6 minutes total. Remove from the skillet and keep warm. Add the stock to

the skillet and cook over medium-high heat until reduced to 1 cup. Add the

orange zest and sake or wine and bring to a simmer. Return the tofu to the

pan to heat briefly. Add the salt and pepper. Serve over rice, sprinkled

with cilantro.
