Guest guest Posted July 5, 2001 Report Share Posted July 5, 2001 I keep forgetting to add a little miso whenever we make ramen packets! * Exported from MasterCook * Soba Soup With Vegetables and Tofu (quick) Recipe By :Main Course Vegetarian Pleasures by Jeanne Lemlin Serving Size : 4 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces soba (buckwheat noodles) 5 cups water 1/2 cup tamari soy sauce 2 carrots -- very thinly sliced 1/2 pound firm tofu -- 1/2-inch cubes 1/2 cup miso 2 tablespoons sesame oil 2 scallions -- very thinly sliced 1. Bring 3 quarts of water to a boil and cook the soba about 5 minutes, or until al dente. Do not overcook it. Drain in a colander, rinse under cold running water, drain again, and set aside. 2. In the same pot, bring the 5 cups of water and the tamari to a boil. Drop in the carrots and simmer 5 minutes. Stir in the tofu and cook 1 minute. Place the miso in a bowl, then remove about 1/2 cup of the broth and stir it into the miso to dilute it. Pour the mixture into the broth. Remove the pot from the heat so the miso doesn't boil. Stir in the sesame oil. 3. Place some soba in large soup bowls and ladle the soup over it. Sprinkle on the scallions.
