Penne With Greek Style Vegetable Marinade (quick)

Amount Measure Ingredient -- Preparation Method

1/3 cup olive oil

3 garlic cloves -- pressed or minced

1 medium zucchini -- halved lengthwise

and very thinly sliced

2 tomatoes -- finely diced

12 kalamata (greek) olives -- pitted and chopped

6 scallions -- very thinly sliced

2 tablespoons finely chopped fresh dill

or 1 1/2 teaspoons dried

1 cup finely diced feta cheese

generous seasoning of freshly ground black pepper

1 pound penne or mostaccioli (quill-shaped pasta)

salt -- to taste

 

1. Combine all the ingredients except the pasta and the salt in a medium bowl.

Toss and let sit for 30 minutes or up to 4 hours. Cover and chill if held longer

than 1 hour; bring to room temperature before cooking the pasta.

 

2. Bring a large pot of water to a boil. Add the pasta and cook until tender yet

chewy, about 10 minutes. Drain thoroughly in a colander. Return to the pot or

place in a large bowl.

 

3. Pour on the vegetable marinade and toss. Serve slightly warm or at room

temperature, tasting to see if salt is necessary.

 

Note: To pit the olives, place them one by one on a cutting board. Lay the flat

surface of a large chef's knife on the olive and give a thump with your fist.

The pit will pop out. Cut the flesh into quarters.

NOTES : This sauce requires no cooking; just marinate everything in one bowl and

toss it onto the hot pasta. Great for summer because of the minimal amount of

cooking involved.
