Melody * Exported from MasterCook Mac * Blue Cornbread with Pepper, Cheese and Chives Recipe By : Developed by Melody Serving Size : 10 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 c whole wheat flour 1/2 c blue cornmeal 1/4 c granulated sugar 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/2 c canned hot pepper -- chopped 1/3 c reduced fat cheddar cheese -- cubed 1/4 c fresh chives -- finely chopped 2 eggs -- lightly beaten 3/4 c buttermilk -- to 1 cup or until correct consistency 2 tbsps canola oil plus extra to oil pan Mix dry ingredient, pepper, cheese and chives in large bowl. Add remaining ingredients, stir until mixed, but do not over mix. Place in oiled pan. Cook according to pan size and toothpick comes out clean. I tripled the recipe in a large sheet cake pan and cooked it 45 minutes.
