Guest guest Posted July 3, 2001 Report Share Posted July 3, 2001 * Exported from MasterCook * Strawberry Tofu Cheesecake LLUMC Recipe By :Loma Linda University Medical Center Serving Size : 10 Preparation Time :0:00 Categories : Desserts Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- CRUST: 30 each vanilla wafers 1/2 cup ground almonds 2 tablespoons melted margarine 1 tablespoon pineapple juice FILLING: 12 ounces soft tofu 1 ripe banana 2 cups sliced fresh strawberries 1/2 cup sugar 2 tablespoons cornstarch 1 1/4 teaspoons salt 2 teaspoons vanilla extract Step 1: Make crust: grind 1/2 cup whole almonds in a blender or food processor until finely ground but not pasty. Transfer to mixing bowl. Place the vanilla wafers in blender 15 at a time, and process until wafers are in fine crumbs. Transfer to bowl with almonds. Step 2: Stir in melted margarine until completely blended. Add the pineapple juice, 1 teaspoon at a time, stirring until well mixed after each teaspoon. Mixture should not be soggy. Step 3: Press crumb mixture into an 8 " round spring-form pan, pressing to a thickness of about 1/8 inch. Press crumbs over the bottom and about 1 " up the sides of the pan. Pre-bake in a 400 degree oven for 10 minutes. Cool. Step 4: To make filling, place the tofu and banana in blender, and blend until smooth. Add strawberries and blend until smooth. Add the sugar and cornstarch and blend until very smooth. Add vanilla and blend a few seconds more. Step 5: Pour filling into prepared crust, and bake at 350 degrees for about 45-50 minutes. The center will still " shake " slightly, while the edges may have started to crack. Cool on a rack for 30 minutes, then refrigerate for at least 4 hours. When cool, remove pan sides, and slice. Serve with extra sliced strawberries if desired. This is the most beneficial kind of fat to include. The cholesterol is from the vanilla wafers; check your labels to see if the cookies are made with egg or not. If not, then the cholesterol value is 0 mg.
