Guest guest Posted July 2, 2001 Report Share Posted July 2, 2001 * Exported from MasterCook * Carrot Bread LLUMC Recipe By :Loma Linda University Medical Center Serving Size : 10 Preparation Time :0:00 Categories : Breads Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup margarine 1 1/3 cups sugar 3 eggs 10 ounces carrots -- peeled 1 tablespoon baking soda 2 1/4 cup flour 2 1/2 teaspoons baking powder 1 1/2 teaspoons cinnamon 2/3 cup buttermilk 3/4 cup walnuts -- chopped Step 1: Cream margarine and sugar until light fluffy. Step 2: Gradually add in the 3 eggs and continue creaming. Step 3: Add carrots and baking soda to creamed mix and blend well. Step 4: Blend flour, baking powder, and cinnamon together. Add this alternately with buttermilk to the carrot mix, mixing well until it is all combined. Step 5: Add walnuts and mix again. Step 6: Place into greased pan or pans depending on size of loaf desired. Bake at 350F until a knife inserted in the center of the loaf comes out clean (about 1 hr 15 mm, for large loaf). Step 7: Cool and cut into 10 servings.
