Golden Tempeh Sandwiches

8 ounces tempeh

2 tablespoons canola oil

2 tablespoons tamari soy sauce

THE DRESSING:

1/3 cup plain yogurt or mayonnaise or combination

of both -- (see note)

1 1/2 tablespoons Dijon mustard

1 tablespoon honey

8 slices bread or 4 round sandwich rolls -- cut in half

8 pieces red leaf lettuce

 

Cut the tempeh in half crosswise (vertically), then cut each piece in half

horizontally to make 4 thin cutlets.

 

Heat the oil in a large nonstick skillet over medium heat. When it is hot, fry

the cutlets until golden brown on both sides, about 7 minutes. Remove the

tempeh to a platter. Drizzle 1/2 tablespoon of soy sauce on each slice and rub

it in with your fingers (the tempeh will readily absorb it). Let cool to warm

or room temperature.

 

To make the dressing, mix the yogurt (or mayonnaise), mustard, and honey

together in a small bowl. Spread the dressing on all the bread slices, top with

the tempeh and lettuce, and close the sandwich.

 

TIP: Toasted bread is especially good for these sandwiches.

NOTES : Cutlets of tempeh that have been drizzled with soy sauce and sauteed

until golden make a great base for sandwiches both hot and cold. Here, tempeh

is matched with a tangy honey mustard dressing that enhances its nutty flavor.

When I make this sandwich for lunch at home, I use yogurt in the dressing, but

for a portable lunch, I have found that a mayonnaise based version holds up

better and won't make the bread soggy. Both dressings are delicious.
